Mix all purpose maida, corn flour, ghee in a large bowl and knead the mixture to a thick, pliable dough. Cover the dough with a plate and keep aside.
Soak the moong daal for 1 or 2 hours and drain well.
Then heat 2 teaspoons of oil in a pan and saute the soaked daal for a minute. When this is complete, after this grind all ingredients in a jar.
Make small balls of the dough and roll them into small puris. Add a tablespoon of the filling and fold well. Roll the puri again.
Now, heat oil in a pan. Fry the prepared puris till crispy and golden, and drain the excess oil. Transfer it to a serving plate, and make a small hole in the center.
Garnish it with curd, salt, green chutney, tamarind chutney, chaat masala powder, boiled potato, boiled chole, coriander leaves, green chillies, onions and sev on top.
